Easy Baked Haddock
Ingredients
- 2 lbs. haddock fillets
- 1 tbs. soy sauce
- ½ cup fresh bread crumbs
- 2 chopped garlic cloves
- 2 tbs. chopped chives
- 2-3 tbs. mayonnaise
- 1 tbs. fresh lemon or lime juice
- Salt and Pepper
Preheat the oven to 425 degrees.
Spray a sheet pan with cooking spray. Rub about ½ tsp. soy sauce onto both sides of each haddock fillet. Lay them skin side down on the sheet pan. In a small bowl, toss together the bread crumbs, garlic and chives. In another small bowl, whisk the mayonnaise and lemon or lime juice. Add a dash of salt and pepper. Check the seasoning. Spread some of the mayonnaise mixture onto each fish fillet. Top each with the breadcrumb mixture. Bake 8 to 12 min. depending on the thickness of the fish.
